Ingredients

For the Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1½ teaspoons baking soda
- 1 teaspoon salt
- 1 cup whole milk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water

For the Raspberry Filling:
- 12 ounces fresh or frozen raspberries
- ⅓ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice

For the Chocolate Ganache:
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped

Steps

  1. Prepare the Cake Batter:
  2. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  3. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Add milk, oil, eggs, and vanilla extract. Mix until combined.
  5. Stir in boiling water until the batter is smooth (it will be thin).

  6. Bake the Cake:

  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

  10. Make the Raspberry Filling:

  11. In a small saucepan over medium heat, combine raspberries, sugar, cornstarch, and lemon juice.
  12. Cook, stirring frequently, until the mixture thickens (about 5-7 minutes).
  13. Remove from heat and let cool completely before using.

  14. Prepare the Ganache:

  15. Heat heavy cream in a small saucepan until it begins to simmer (do not boil).
  16. Pour over chopped chocolate in a heatproof bowl and let sit for 2-3 minutes.
  17. Stir until smooth and glossy. Let it cool slightly before using.

  18. Assemble the Cake:

  19. Place one cake layer on a serving plate. Spread the cooled raspberry filling evenly over the top.
  20. Place the second cake layer on top.
  21. Pour the ganache over the cake, letting it drip down the sides.
