Ingredients¶
For the Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1½ teaspoons baking soda
- 1 teaspoon salt
- 1 cup whole milk
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
For the Raspberry Filling:
- 12 ounces fresh or frozen raspberries
- ⅓ cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
For the Chocolate Ganache:
- 1 cup heavy cream
- 8 ounces semi-sweet chocolate, chopped
Steps¶
- Prepare the Cake Batter:
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add milk, oil, eggs, and vanilla extract. Mix until combined.

Stir in boiling water until the batter is smooth (it will be thin).

Bake the Cake:
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Make the Raspberry Filling:
- In a small saucepan over medium heat, combine raspberries, sugar, cornstarch, and lemon juice.
- Cook, stirring frequently, until the mixture thickens (about 5-7 minutes).

Remove from heat and let cool completely before using.

Prepare the Ganache:
- Heat heavy cream in a small saucepan until it begins to simmer (do not boil).
- Pour over chopped chocolate in a heatproof bowl and let sit for 2-3 minutes.

Stir until smooth and glossy. Let it cool slightly before using.

Assemble the Cake:
- Place one cake layer on a serving plate. Spread the cooled raspberry filling evenly over the top.
- Place the second cake layer on top.

Pour the ganache over the cake, letting it drip down the sides.
